Vinification and ageing

Our vinification practices are elaborated every year according to the vintage: health state, yealds, sugar maturity, phénologic maturity, acidity, …

We use barrels every year: new barrels for the vinification of a part of any Premiers Cru and a part of Grand Cru. Older (between 2 and 8 wines) barrels for the ageing of the totality of the Premiers Crus and Grand Cru.
