Chablis, a small village, pleasant and accessible, located in Burgundy in the department of Yonne, halfway between Dijon and Paris, opens out in the centre of its admirable vineyard orientated East to West, in the splendid valley of the Serein. The Chablis vineyard soils, dating from the secondary era, are consisted of the ages known as "Portlandien " and " Kimméridgien ". This last, most significant for the culture of the vine, consists of argillaceous limestone containing tiny oyster fossils which are traces of a sea covering Burgundy and Chablis 150 million years ago.

It is ideal ground for the vine in general, and Chardonnay in particular, the king grape variety in Chablis.
