For more than 350 years, the Domaine Pinson family has endeavoured to work with the tradition. The objective: to produce top class wines. The quality of the raw material is of primary importance. Throughout the season, from pruning the vine to the all important grape harvest, all the vineyard work is carried out with the greatest of care, so that the unique plant variety " Chardonnay " cultivated at 100 % in our vineyard, gives the maximum of its potential.
Before the winter pruning, which begins around the end of November, we provide our vines with an amendment 100% organic, in order to reinforce our soils in humus and furnish the vine with the correct nutrients and rock salt necessary for its growth. A winter ploughing is practised on 50 % of our vines in one year, and 50 % the following year.

After the pruning has finished towards to the end of March / beginning of April, the new vine branches left on the stocks, which will carry the future grapes, are attached on a wire. This work should not be carried out too early, because the severe spring frosts can "burn " the young growths, which carry the grapes. However, certain vineyards have a protective system to fight against these frosts ( burners ), in order to protect the future harvest.
