Average Vineyard Age : 30 years old.
Rootstock : SO4 ET 41 B
Situated : Right side of the Serein River.
Type of Soil : Marls and calcareous clayey from the Kimmeridgien period.
Exposition : Direct South.
Plant Variety : Chardonnay, locally known as "Beaunois".
Vinification : Alcoholic and malolactic fermentation in stainless steel tank for 90 %, and 10 % in new oak casks. Assemblage and ageing on its lees in oak cask (228 L.) for 6 month.
Age of casks : 1 and 2 years old
First bottling 12 month minimum after the harvest.
Service Temperature : 12°C to 14°C
Food Match : Fish in rich sauce, lobster, foie gras, white meats with cream sauce.
Maturity : 6 to 8 years approx.
Conservation : 10 to 15 years. Ageing potential of more then 20 years in the excellent vintages.
