Vineyard size productive : 4 Ha 75 a 85 ca
Average Vineyard Age : 25 years old.
Rootstock : SO4 and 41 B
Situated : Right side of the Serien River
Type of Soil : Marls and calcareous clayey from the Kimmeridgien period.
Exposition : South, South-East
Plant Variety : Chardonnay, locally known as "Beaunois".
Vinification : 100% fermentation alcoholic and malolactic in stainless steel tanks. Matured on its lees in oak casks (228 litres) for 6 months.
Age of Oak casks: 3 to 6 years old.
First bottling 12 months after the harvest.
Service Temperature : 12°C to 14°C
Food Match : Fish with sauce, white meat with cream, ham of the bone with a chablisienne sauce.
Maturity : 4 to 6 years approx.
Conservation: 8 to 12 years
