Type of Soil : Marls and calcareous clayey from the Kimmeridgien period

Plant Variety : Chardonnay, locally known as "Beaunois"
Vinification : 100% fermentation alcoholic and malolactic in stainless steel tanks. Matured on its lees in oak casks (228 litres) for 6 months.
Age of Oak casks: 3 to 6 years old.
First bottling 10 months after the harvest.
Service Temperature : 12°C to 14°C
Food Match : Shell fish, fish, terrines...
Maturity : 4 to 6 years approx.
Conservation : 8 to 12 years.
